I was thinking about getting a high voltage power supply to do some experiments with this myself. The one im looking at getting can range from 0 to 60Kv with current rated at about 2mA.

intuituition tells me that putting HV into water is a bad idea. 60,000 volts is scary enough by itself but mixed with water? umm...

If you didn't leave the level shifter connected to the secondary or didn't rectify the output then you’ve probably just put AC into the water which heated it up until it boiled. The electrodes being slightly hotter than the water is what makes it look like electrolysis (because of all the bubbles coming off them) but really you’re just boiling the water around the electrodes. I’m also wondering if you ballasted the primary as most microwave oven transformers draw in the order of 15 amps which is too much for a lot houses to handle without the circuit breaker tripping. In any case these transformers have deadly power so rewinding the secondary for low voltage high current is a better use but you still have to deal with the primaries enormous current draw.
