resident_genius here's 4 inline fuel cooler-heaters.
Normaly refridgerant passes through these for chilling,
but hot water could be plumbed through for heating.

Nice - if you decide to use these in the exhaust gas stream, any rubber or plastic bits like seals or olive rings etc will burn up quickly.

I am looking at using normal house gas plumbing fittings that use copper and brass for all joints - my aim is to allow 1600 F tempertures to heat the water going through.........

I do like the idea of using the refrigeration fittings as someone has done the fiddly job of welding and pressure testing. Be careful though - some of the solders used may melt at around 500 F ( unless they are brass or silver based ) but even then you would need to be cautious.

Just a thought....

Problem is the DPFE/EGR/AIR systems that use the fore-mentioned high priced hoses are totally dependent on there being no actual exhaust FLOW through them. If an AIR system check valve or a DPFE sensor diaphragm ruptures and allows actual exhaust gas to FLOW through the hoses, they fry in a relatively short order due to the high temp's. The AIR check valve is counting on the pump to occasionally blow air through it, as the DPFE sensor and tubing is far enough away from actual exhaust heat, that they can survive and do their job of monitoring pressure differentials. At least here in Florida, they are replaced quite often because of the above mentioned circumstances. Be careful [:)
